Preheat your oven to 3750F (1900C). Lightly grease a 12-cup standard muffin tin. If using paper liners, no greasing is needed for the cups.

Unroll the pie crusts onto a clean, flat surface. Using a 3-inch round cookie cutter or the rim of a glass, cut out 12 circles from the pie crusts. Gently press each crust circle into the prepared muffin cups, forming a small cup.

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Stir in the shredded cheddar cheese, diced ham, and chopped spinach.

Carefully pour the egg mixture evenly into each pie crust-lined muffin cup, filling them about two-thirds full.
