Quick & Easy Ground Beef Quesadillas
Whip up these satisfying and flavorful ground beef quesadillas in under 30 minutes for a perfect weeknight meal. Featuring seasoned beef, melted cheese, and a crispy tortilla, they're a family favorite that comes together with common pantry ingredients.

Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper and cook for 3-5 minutes, stirring occasionally, until they begin to soften.

Add the ground beef to the skillet with the vegetables. Break the beef apart with a spoon and cook until it is fully browned, about 6-8 minutes. Drain any excess fat from the skillet.

Stir the taco seasoning into the browned beef and vegetable mixture. If your seasoning packet directs, add 1/4 cup of water and cook for another 1-2 minutes until the liquid has absorbed and the beef is well coated. Remove the beef mixture from the skillet and set aside.

Wipe the skillet clean (or use a separate non-stick pan) and place it over medium heat. Lay one flour tortilla flat in the dry skillet. Sprinkle about 1/4 cup of shredded cheese over one half of the tortilla.

Spoon about 1/4 cup of the seasoned beef mixture onto the same cheesy half of the tortilla. Top the beef with another 1/4 cup of shredded cheese. Fold the empty half of the tortilla over the filled half to create a crescent shape.

Cook the folded quesadilla for 2-3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and crispy, and the cheese is completely melted and bubbly. Carefully transfer the cooked quesadilla to a cutting board.
